Corn with Chile Lime Butter Recipe courtesy Aaron Sanchez *Recipe Summary* *Prep Time:* 10 minutes *Cook Time:* 8 minutes *User Rating:* 4 Stars 1/2 pound unsalted butter, softened 1 tablespoon minced garlic 2 limes, juiced 2 tablespoons chopped cilantro 2 tablespoons rocoto chile paste 1 teaspoon ground cumin Salt and pepper 4 ears fresh corn Preheat grill on high. In medium mixing bowl, combine the butter, the juice of the 2 limes, cilantro, chile paste, and cumin. Season with salt and pepper. Mix well and set aside. Peel the ears of corn and on the hot grill, grill the corn until charred nicely on the outside. Serve with a spoonful the flavored butter on top.
